It’s science man!
No, yogurt and sour cream are lactic acid cultures/fermentations which
actually help keep the milk/cream in them from spoiling. The use by
date means after that, the milk/cream in it will likely spoil, being
overtaken by other bacteria.
So it’s not originally spoiled, it’s originally altered with a certain
bacteria in larger quantities, and then over time spoils naturally,
later, just like unaltered milk or cream. : )
