Really what I need to do is create a stack with sidecars, and to set restart to never. I’ve read you need to start with rancher-compose, or the API I suppose.

There is no rancher-compose for 2.x, that’s basically kubectl. The 2.x CLI for managing rancher-specific resources is just called rancher and is in the “Download CLI” menu in the footer of the UI.
