Is Rancher 2.0 compatible with CentOS 7? I know that in this guide (https://bit.ly/2x5rP3J) CentOS is not mentioned but just asking if other flavors of Linux specifically CentOS is supported.

I guess it’s compatible without being supported 
After all CentOS is the upstream project that is used for building RHEL.
This looks like a good recipe for getiing the right Docker version installed: https://docs.docker.com/install/linux/docker-ce/centos/
