Maybe I only have difficulties, to wrap my mind around this:
I want to manage the Rancher Server in a HA Setup and with SSL Termination out of itself.
Is this possible in somewhat of a two step procedure? How should I think about that?

Did you ever get this working ? I had to roll my own nginx SSL proxy but it would have been much easier to use Ranchers built in LB.
We did this the same way. However, we afterwards added rancher as an external service and then just moved on to more pressing issues. MAYBE you can put then a rancher lb on the external service and finally drop your original nginx. Might work.
