not that I’ve ever had HyperV at hand, but I wouldn’t see why not. Setting up the shared disk(s) is described i.e. in https://technet.microsoft.com/en-us/library/dn265980.aspx (“Step 3: Create and enable a shared virtual hard disk”), everything else is handled inside the VM.
Did you already face a specific problem, or are you evaluation your options?
