This has nothing to do with postfix, cyrus or even SLES.
SMTP mail header are not allowed to have other than 7bit characters in
it, so every other character has to be encoded to 7bit using i.e. quoted
printable.
Read about SMTP mail and MIME in places of the internet or books you
like.
