Ok so I the information I need to review whats going to happen - is there any way to change whats going to happen ? Particularly I want to stop the replacement of php5 with php7 as the application that is currently using php5 isn’t ready for php7 yet.

Try adding locks (zypper al) or via SuMA to the php5 packages then
manually update after the upgrade.
Temporarily delete the php7 packages from SuMA before it syncs maybe?
