How does one go about changing registration numbers for a sles / oex
box that states it’s expired?

Going through yast, online update config, I cannot get to the spot
where I can change sles or oes registration numbers as the process
fails.

I do have active maintenance, just need to change the reg number.

Suggestions?

Try with the suse_register command from the CLI;

suse_register -n -a regcode-sles=YourActivationCode -a email=YourEmailAddress -a moniker=YourHostname -L .suse_sles_register.log
suse_register -n -a regcode-oes=YourActivationCode -a email=YourEmailAddress -a moniker=YourHostname -L .suse_oes_register.log

Not sure about the second one, maybe there is a oes_register command?

Was just about to reply (or delete) my post. Figured it out, use the
suse_register with both regcode-sles and regcode-oes.
