I just installed Rancher 2.0.4 and I only see 14 apps to install, I thought there were dozens of preconfigured apps I can choose from. Do I need to install a special package to get all the catalog apps?

By default only the range catalog is enabled, which is helm stable items with questions and defaults to work better out of the box. You can enable helm-stable or -incubator, but they all require careful reading of the readme and configuration according to your situation to successfully use in general.
